Long time, no post- Plus a recipe we had today

Life has been busy around here. We survived the pine wood derby! This was our first time to ever compete in one and e did pretty good. One funny part is that my three youngest were the only three in their age category. So, needless to say, we came home with all of those trophies. The next group was a pretty tough group. My oldest took second and my oldest almost won a spot too, but her wheel feel off on the final race. It was pretty fun and I am pretty sure they enjoyed themselves. I didn't really see much because I volunteered to help in the concession. It was a wild and fun day and the gospel was shared with someone and of course, God wasn't left out of this event. When I look back on it, it was a worthwhile event for us to do as a church. While I was in the thick of it and it looked a little like chaos, I wondered how it would end up being. I am happy we were able to participate!
We tried a new lunch today. We are using the Prairie Primer for our curriculum and they talked about corn dodgers in one of the chapters today. I found a recipe, changed it a little bit, and made those for lunch. Here is the recipe if you are interested.
Corn Dodgers
4 C Cornmeal- I used two cups regular and two cups stone ground
2 1/2 tsp Salt
1 Cup Boiling water
3 T Coconut oil (you can use whatever solid fat you want)
1/2 C Sucanat (you can use whatever sugar you want)
1/2-1 C Milk
Fat to fry in- I used about 1/4 to maybe 1/2 Cup

Combine cornmeal, salt, and sucanat in a medium to large bowl. Put the solid fat in the middle of the cornmeal mixture. Pour the boiling water over the top. Stir. Add enough milk to make it wet but not too wet. Heat the fat in a skillet. I made dollops, a rounded tablespoon amount, and put into the pan. Cook until lightly brown and flip. Cook until other side is brown and drain on paper towels. Serve with syrup, ketchup or whatever you want.
The kids really liked these and so did I. I think I am going to add these to our menu on a regular basis.

Hey there! I saw you post on some other blog (I can't recall right now, Candy? or Stephanie?) I just wanted to say that we did that too years ago with my oldest.

Little House was always some of my favorite books growing up, and while my girls haven't loved them to the same extent that I did (I *still* read them sometimes, just because!), doing the Prairie Primer was great.

Your post really brought back memories.
