Well, we have been traveling for over a month now. There have been a few ups and downs, lots of mistakes, err learning, sprinkled with lots of laughter. Adjusting to only a bit of square feet for 7 people has been quite an adjustment. I still have lots of learning to do, but things are getting better. One area, besides "housekeeping" that has been an adjustment, is cooking. When we first started, we ate fairly healthy and then it went downhill. With us being on a budget, and me not traveling with a pantry, we were eating dollar store food. I wasn't prepared at all for this. I have been doing some thinking and planning and have even started a sourdough starter. I need to make a few changes all around, but I really need to get our eating situation under control. I have to find a way to eat on a budget without the use of a large pantry (a small one is ok, but nothing big), a large fridge and no freezer. We have an ice chest and a small Coleman Cooler. I had a CP but forgot my lid, so I threw it away. Now I am on the look out for a CP at a second hand store. I know that will give me a few more options.
Having dh around fulltime has been great. Sometimes he has to go to the main lodge area for their WiFi because we don't get a good signal with the Air Card but that is ok. The kids do school during that time. We asked the kids if they want to go back to a house or keep traveling and they unanimously said keep on traveling. That was nice to hear. I know everything hasn't been an easy transition. They are doing great and thoroughly enjoying themselves. It has been wonderful to get out and enjoy so much with them. I haven't heard but a few "I'm Bored's". I really thought I would have heard a lot of those by now.
I am hoping to start putting some of my recipes on here for safe-keeping. If I knew what I was doing, I would add a section to one of our websites with the recipes, but that is dh's department.
