Cookie Recipe

It has been a rainy day here in Wisconsin but at least a little productive. We are supposed to have a picnic after church tomorrow (I say supposed to because of the rain). I have made potato salad to take, a large bowl full. My potato salad is liked by everyone that has tried it, even those who don't like potato salad. I like to take it since it is liked by so many. We are also going to take some Snicker Doodle cookies. These are also really popular. They are easy, cheap and so yummy. If you like Snicker Doodles, you will love these.
1 C Shortening, butter or margarine
2 Eggs
1 t Baking Soda
1 1/2 C Sugar
2 1/4 C Flour
1/2 t Salt
Beat the fat that you have chosen with the sugar. Once the mixture is nice and creamy and light, add the eggs. Beat until they are nice and creamy. Add the dry ingredients to the creamy mixture. Roll into balls about the size of a walnut. In a small bowl mix together 1/2 c sugar with 3-4 T of cinnamon. Roll each ball of cookie dough into the cinnamon/sugar mix. Place on cookie sheets about 2 inches apart. Bake in a 400 degrees oven for 8-10 minutes.
When they are cooked just right, the middle is still a little gooey and soft and the edges are just barely crisp.
